Delicious Homemade Desserts: Icebox Pies, Apple Pie, Cheesecake, and More!

If you’re not making your icebox pies in a cast-iron skillet, what are you even doing? I love icebox pies in the spring and summer because they’re cold, refreshing, and so easy to make. One of my secrets is making them in a cast iron skillet because it helps retain the chill longer than a traditional pie plate.

Atlantic Beach Pie

This recipe for Atlantic Beach Pie is one of my go-to’s. Instagram went crazy over this apple pie, and I don’t blame them. This is one of the easiest apple pie recipes I’ve ever made. The skillet has a lot of advantages over a pie dish… it’s a one-dish wonder, which I love. It’s also extra delicious because the bottom crust gets cooked in the buttery caramel sauce. It’s made in a cast iron skillet, so the heat retention lets you have an uber crispy crust.

Classic Pecan Pie

If there is one southern pie recipe you should master, this is it: classic pecan pie. Yes, pecan, not pecan or pecan. The hardest part is cooking sugar, corn syrup, and butter on the stove until the sugar is fully dissolved in order to mix the hot sugar mixture with the eggs. Pour it all in a pie crust and bake until the center is just set. Let it cool completely before slicing and enjoying your pecan pie.

Cheesecake Pecan Pie

What happens when pecan pie and cheesecake have a baby? It makes one of the most decadent desserts you’ll ever eat. Start by pouring cheesecake batter into a cooled and baked pie crust. Top the cheesecake with chopped pecans, then spoon over a brown sugar egg custard filling before topping with pecan halves. Bake the pie in a pie plate, let it cool completely before slicing.

Microwave Cheesecake

You can make a cheesecake in the microwave! I found a vintage cookbook all about microwave cooking and was shocked to find a recipe for making cheesecake. This recipe for Black Forest Cheesecake called to make a crust out of crushed chocolate wafers, cook it in the microwave, then mix up a pretty traditional cheesecake filling.

Foolproof Meringue

I’m going to show you a few tricks and a method to make foolproof meringue. Whisk together three egg whites, cream of tartar, and sugar until satiny smooth. The meringue will be perfect for meringue pies or meringue-based cookies.

Whiskey Chocolate Moon Pie Pie

I turned this dessert into something even better: Whiskey Chocolate Moon Pie Pie. Make a graham cracker crust, then make a marshmallow layer, a chocolate ganache with whiskey, and a vanilla. Spread it with a marshmallow meringue to top it off. This is one of the best desserts I’ve made in a while.

Fried Apple Pies

You’ll not believe the shortcut for these fried apple pies. Buy or make your own apple pie filling. The secret is using tortillas to create a crispy outer layer. Fill flour tortillas with apple pie filling, fry in vegetable oil until golden and crisp, then let them drain on wire racks.

Snickerdoodle Donut Holes

What’s better than a snickerdoodle? Snickerdoodle donut holes! Mix up a simple muffin batter, fill a mini muffin tin, and bake. Once cooled, dip the donut holes in melted butter and then in a mixture of cinnamon sugar and nutmeg.

Deep-Fried Oreos

Deep-fried Oreos aren’t just for the fair. Making them at home is so easy! Just mix pancake mix, milk, and an egg, dip the cream side of the Oreo in the batter, then fry until golden and crispy.

Sugar Cookies

There’s a sugar cookie dough that takes only three minutes to make in one bowl with one spoon. Stir together flour, sugar, baking soda, salt, oil, milk, vanilla extract, and almond extract. Press the dough into a quarter-inch-thick, cut out circles, and bake until edges are brown. These cookies are crisp, tender, and slightly chewy.

Single Serve Cookies

Here’s a recipe that’s perfect for just one person. Soften butter in the microwave, mix it with brown sugar, regular sugar, flour, vanilla, and chocolate chips. You can eat the dough straight or bake it for 15 minutes at 350 degrees.

Edible Cookie Dough

If you want to make edible cookie dough, heat treat your flour first by microwaving it until it’s above 165 degrees. Then mix it with sugar, butter, and vanilla extract. Divide the dough into two bowls to make two flavors. Freeze or refrigerate before enjoying.

Single Serve Blondie

This single-serve blondie is similar to a chocolate chip cookie recipe but slightly denser and more cakey. Soften butter in the microwave, mix it with brown sugar, regular sugar, flour, vanilla extract, and chocolate chips. Bake in the oven and enjoy.

Peach Cobbler

Let’s make some peach cobbler. Slice and peel peaches, whisk together flour, sugar, and milk with baking soda, pour the batter into melted butter in a baking dish, top with peaches, and bake until golden and bubbly.

Truvi’s Cup a Cup a Cobbler

This cobbler was inspired by Steel Magnolias and is one of the easiest recipes you’ll ever make. Combine flour, sugar, and fruit cocktail with the juice in a butter dish and bake until golden and bubbly. Serve with ice cream to cut the sweetness.

Peach Ice Cream

To cut the sweetness, make peach ice cream. Pour cream, sugar, vanilla extract, and salt into a quart-sized mason jar and shake until thickened. Stir in peaches and freeze for three hours or overnight.

Buttermilk Peach Popsicles

You only need five ingredients to make these buttermilk peach popsicles. Combine buttermilk, peaches, sugar, vanilla extract, and salt in a food processor. Pour the mixture into plastic molds and freeze for a refreshing treat.

Banana Pudding

This banana pudding is so easy to make. Slice bananas, make vanilla pudding according to package directions, stir in sour cream, make homemade whipped cream, and layer it all together. Serve chilled and enjoy.

Homemade Caramel

Make homemade caramel by cooking sugar, water, and lemon juice until it turns into a pale amber color. Stir in cream and pour over ice cream or eat it by the spoonful.

Homemade Caramel Apples

To make homemade caramel apples, cook corn syrup, brown sugar, butter, and salt until it reaches the desired temperature. Stir in vanilla and dip cold apples in the caramel. Let it cool before enjoying.

Creme Brulee

I’m here to show you how to make creme brulee. Whisk together egg yolks and sugar, add vanilla, heat half and half with salt, combine the mixtures, transfer to ramekins, bake in a water bath, sprinkle with sugar, and torch until browned and crispy.

Iced Pumpkin Cookies

These iced pumpkin cookies are a hit with the friends and family. They are super soft, not too sweet, and topped with cream cheese frosting. Make the cookies and frosting, layer them, and chill before serving.

Caramel Corn

Making caramel corn is easy. Combine brown sugar, butter, corn syrup, salt, and cream of tartar, boil until caramel deepens in color, stir in vanilla, pour over popcorn, and bake until crispy. Break apart and serve.
